Edith's Homemade Cornbread

  • 1/4 cup of Canola Oil plus 2 tablespoons to oil the pan
  • 1 cup milk
  • 1 egg
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 3/4 cup corn meal
  • 1 1/4 cup flour


  1. Preheat the oven to 400 degrees.
  2. Combine flour, corn meal, baking powder, sugar and salt into a medium size bowl and mix together.

  3. In another bowl combine egg, milk and 1/4 cup canola oil, mix until smooth.

  4. Combine the dry ingredients and the wet ingredients and gently mix together.  Don't overwork the batter.  Allow the mixture to rest in the bowl for about 2-3 minutes.

  5. Meanwhile, add 2 tablespoons of canola oil to your pan and place in the hot oven for 2-3 minutes.

  6. Remove the pan from the oven and pour the batter into the heated pan and bake for 15-20 minutes, until a toothpick inserted in the center comes out clean.

Recipe Notes

Cut into pie-shaped wedges for best results, and of course this is best served when it's warm!!
