Ingredients

For The Fajitas:

  • 1 tablespoon olive oil
  • 12 ounces al fresco Mild Mexican Style Chicken Sausage, sliced into 1/2 inch pieces
  • 1 large white onion, thinly sliced
  • 2 large sweet bell peppers (red, orange or yellow) thinly sliced
  • ¼ cup water
  • 1 lime, juiced, and more wedges for serving
  • 2 tablespoons rough chopped cilantro
  • Corn or Flour tortillas (gluten-free if desired), warmed. ** Or lettuce leaves for low carb option!**
  • Toppings: Shredded cheese, Sour cream, Pico De Gallo, Salsa, Avocado, guacamole, Jalapenos

For The Taco Seasoning:

  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon powdered garlic
  • ½ teaspoon oregano
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Heat 1 tablespoon olive oil over medium high. Add onions and sauté 3 minutes.
  2. Add the sliced peppers and cook 3-4 more minutes. Add the chicken, all taco seasoning ingredients, and ¼ cup water. Stir and sauté for 3 more minutes.
  3. Squeeze additional fresh lime juice over the skillet, sprinkle with fresh cilantro, and serve with tortillas or lettuce wraps with all your favorite toppings.
