We’re talking grilled perfection in the comfort of your air conditioning or heat – depending on where you live. (Sorry to all my Boston crew. Hang in there, you just have another month or so and you can put those hats, boots and scarves away.)
Since I’m in Florida and it’s 85, sunny and 100% humidity, cooking these yummy meat and veggie sticks in my Air Fryer was kind of nice.
This recipe is pretty straight forward… you marinate the chicken, cut up the veggies, skewer and air fry them up!
Boom – a delicious and easy low-carb, gluten-free meal.
Have you noticed that the Mediterranean Diet is pretty big right now? Yep – and Greek recipes are right in the center of it.
It’s basically a heart-healthy eating plan that includes the food staples of people who live around the Mediterranean Sea… anywhere from Spain to Greece to Israel.

How to make air fryer chicken kabobs
I used chicken breasts for these kabobs but you could use chicken thighs as well if you preferred.
I mixed up a zesty marinade, added my cubed pieces of chicken to a large mixing bowl and tossed it all together. I let it sit for several hours in the fridge and gave it a stir every now and then.
I cut up two sweet bell peppers – red, yellow or orange.
And I cut up a large red onion by slicing it in half across its width, then cutting it into pieces that were about the same size as my peppers. I like to leave several layers of the cut onion together.
Then I cleaned a few mushrooms (cremini mushrooms or white button mushrooms work great).
Then I started skewering all this delicious onto 7-inch skewers. Depending on the size of your air fryer basket you will either need 6,7 or 8 inch skewers – metal or wood. Basically whatever you can find that fits your air fryer basket.
My basket required 7 inch sticks – which I couldn't find so I cut my 8 inch wooden ones down with a strong pair of kitchen scissors.
I assembled the chicken kabobs and placed them on a baking sheet as I went.
Next, it was time to fry!
Personally I like to preheat my air fryer. I know some people don’t but I just figure I pre-heat my oven, my grill and my saucepans on the stove… so why not?
How long to cook chicken in air fryer?
I preheated my air fryer (I have the Phillips "Avance" 3.5 Quart Air Fryer) to 390 degrees.
I cooked my kabobs in two batches so I didn’t overcrowd them.
It took 13 minutes for the air fryer chicken breast to reach 165 degrees with my digital meat thermometer.
I “fried” up my second batch and voila… dinner was ready.
I held a little of the marinade back (before I added the chicken!) and used it as a drizzle when I served them.
They were so tasty!
If you aren’t concerned with keeping it low carb you could always cook up a batch of quinoa, couscous, or orzo for a well-rounded meal.
And if you’re like me and my house you could serve them with some cauliflower rice, mashed cauliflower, zucchini noodles, or just straight up as chicken and veggies.

Greek Air Fryer Chicken Kabobs

Greek Air Fryer Chicken Kabobs! Tender chicken marinated in Greek dressing with lots of veggies, cooked to perfection in the air fryer.
Ingredients
For The Greek Marinade (reserve 3 Tablespoons!)
- ½ cup red wine vinegar
- ⅓ cup olive oil
- 2 tablespoons dried oregano
- 3 garlic cloves, minced
- 2 tablespoons finely chopped flat leaf parsley (more for garnish)
- ½ teaspoon salt
- ½ teaspoon pepper
For The Chicken Kabobs:
- 2 pounds chicken breasts, cut into cubes
- 2 large sweet bell peppers, cut into pieces the same size as the chicken
- 1 large red onion, cut into pieces the same size as the chicken
- 8 ounces Cremini or white button mushrooms, cleaned and stems removed
Instructions
- Add the Greek marinade (reserving 2-3 tablespoons for serving) and the chicken to a mixing bowl and toss well. Allow the chicken to marinade for at least 1 hour up to 24 hours covered in the refrigerator.
- Skewer the chicken and veggies onto 6, 7 or 8 inch wooden or metal skewers. Whatever fits in your air fryer basket.
- Preheat the air fryer to 390 degrees.
- Add the chicken kabobs in batches and cook for 13-15 minutes, until a digital meat thermometer temps the chicken at 165 degrees.
- Drizzle the reserved Greek Marinade over the kabobs and sprinkle with fresh parsley.
