Here’s everything you’ll need for the perfect taco soup:
- Ground Beef: I’m all about protein, so I used 11/2 lbs of lean ground beef to make this soup really hearty. You can swap the beef out for ground turkey or ground chicken or make it vegetarian by omitting the meat and adding more beans and veggies.
- Onion: Diced for a flavor-packed soup base.
- Jalapeños: Membranes and seeds removed, finely chopped for a little earthy kick.
- Garlic: Minced, because everything tastes better with garlic – right!?
- Taco Seasoning: A combination of chili powder, cumin, oregano, salt, and pepper gives this soup its vibrant savory flavor.
- Zoup! Beef Bone Broth: Adds exceptional richness and robust flavor.
- Beans: Drained and rinsed. I used black beans and pinto beans for this soup. They are an amazing source of protein and fiber. You can also try other canned beans like Great Northern, Kidney, or Cannellini beans.
- Canned Diced Tomatoes: I prefer petite diced tomatoes with their juices for this recipe.
- Canned Tomatoes with Chilies: With their juices for some zesty flavor.
- Tomato Sauce: This thickens the broth just a bit and adds a little brightness to the soup.
- Frozen Sweet Corn: For some sweetness, fiber, and a beautiful color combo.
- Fresh Cilantro: I love cooking with fresh herbs like cilantro.
- Toppings: Add all your favorite taco toppings… shredded cheese, sour cream, green onions, jalapenos, cilantro, diced tomatoes, chopped avocado etc.
How to Make Taco Soup
In a large pot or Dutch oven over medium heat, add olive oil, ground beef, salt, and pepper and cook for 5 minutes or until cooked through.
Add diced onion, diced jalapeno, and sauté for 3-5 more minutes.
Then add the minced garlic to the pot and cook one more minute.
Next, add the chili powder, cumin, oregano, and stir.
Stir in diced tomatoes, tomatoes with green chiles, tomato sauce, black beans and pinto beans, cilantro, and Zoup! Beef Bone Broth.
Next, bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes. Then add the corn and simmer for 5-7 more minutes.
Ladle the soup into bowls and add your favorite toppings!
