Back in my post-college days I went through a stage where I ate tortilla chips and homemade salsa every night for dinner. And I loved it! Bonus, it was pretty economical too!
Oh those were the days.
Since then, I’ve expanded my Mexican food choices and I have yet to find a dish I don’t love. I even tried beef tongue tacos a while ago – delicious!

I know it seems unreal but this is not a dream my friend. Oh no - it’s the best version of Mexican recipe reality everrr!

I used al fresco's Mild Mexican Style Chicken Sausage for today’s recipe. And similar to their other chicken products, this sausage is made from lean chicken, it’s fully cooked, gluten-free, and contains absolutely no antibiotics.

How about we talk about how these delicious Chicken Sausage Fajitas come together…
First, I want to share with you a tip on heating and preparing your tortillas. I get asked now and then how I get all the color on my tortillas. So I thought I’d share my tips with you today.
How to heat tortillas:
Many times people wrap them in foil and heat them in the oven. I find that can leave them doughy and flavorless and all stuck together.
So here’s my foolproof method for making the best flour tortillas for all your tacos and fajitas.
Heat a cast iron pan or a non-stick pan over high heat (don’t add any oil to the pan or it will burn).
Once it’s really good and hot, turn it down to medium-high heat. Very lightly spritz one side of your tortilla with high heat cooking spray (like canola oil, avocado oil etc.). Then place it oil side down in the hot pan.
Let it cook for 20-30 seconds then spritz the top side, flip it to warm the other side for another 20- 30 seconds, then set it aside on a plate and repeat with the rest of the tortillas.
You want the tortilla to get some nice deep golden spots and for a few air pockets to rise all over the tortilla. (You have to keep your eye on them though because they will burn quickly if you’re not paying attention.)
This method is so quick and easy, it adds flavor and texture, and you can make sure they’re nice and warm right when you’re ready to eat. (You can use this same method with corn tortillas as well but you may need to allow them to cook for 30-60 seconds per side.)
Fast & Healthy Chicken Fajitas:
Now more about these easy Chicken Fajitas:
You’ll want to slice your onions and peppers before you start cooking. Or you can always hit the "easy" button and buy the fresh pre-chopped peppers and onions in the produce department, or the frozen version in the frozen veggie area at your local grocery store.
Next, heat 1 tablespoon of olive oil over medium high heat. Add the onions and saute for 3 minutes.
Then add the sliced peppers and cook 3-4 more minutes.
Stir in the al fresco chicken sausage, the seasonings, and ¼ cup water, then saute for 3 more minutes.
Finally, squeeze fresh lime juice all around the skillet, sprinkle with cilantro, and serve with warm flour tortillas, corn tortillas or even lettuce wraps.
And your delicious dinner is served!!

Easy Chicken Sausage Fajitas

Family weeknight dinner perfection ready in 15 minutes! Sauteed peppers and onions, Mexican spices, fresh lime juice and @alfrescochicken Mild Mexican Style Chicken Sausage all wrapped up in a warm flour tortilla – yum.
Ingredients
For The Fajitas:
- 1 tablespoon olive oil
- 12 ounces al fresco Mild Mexican Style Chicken Sausage, sliced into ½ inch pieces
- 1 large white onion, thinly sliced
- 2 large sweet bell peppers (red, orange or yellow) thinly sliced
- ¼ cup water
- 1 lime, juiced, and more wedges for serving
- 2 tablespoons rough chopped cilantro
- Corn or Flour tortillas (gluten-free if desired), warmed. ** Or lettuce leaves for low carb option!**
- Toppings: Shredded cheese, Sour cream, Pico De Gallo, Salsa, Avocado, guacamole, Jalapenos
For The Taco Seasoning:
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon powdered garlic
- ½ teaspoon oregano
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- Heat 1 tablespoon olive oil over medium high. Add onions and sauté 3 minutes.
- Add the sliced peppers and cook 3-4 more minutes. Add the chicken, all taco seasoning ingredients, and ¼ cup water. Stir and sauté for 3 more minutes.
- Squeeze additional fresh lime juice over the skillet, sprinkle with fresh cilantro, and serve with tortillas or lettuce wraps with all your favorite toppings.
Notes
The nutrition calculations shown are for one 4-ounce serving of chicken with peppers and onions. You'll need to add the carbs/calories/etc. for the specific type of flour or corn tortilla you choose (or lettuce for the lower carb version).
